KVEVRIS | THE RETRO-INNOVATION
Two kvevris were installed in July 2014 in the Kox Domain in Remich. Made in Georgia, they are clay, amphora-shaped containers that get buried in the ground. They are specifically made for wine making. At the Kox Domain, the first varieties vinified in kvevris are the Pinot Blanc and the Riesling.
2021 WELCOME BACK, TREES
With her "ORCHARD" project, the young winemaker is embarking on the viticulture of tomorrow, while patiently listening to the echoes of the past and particularly to the family roots anchored in the vine, respect for the soil and biodiversity. It has been more than a century that European vines became infested with fungal diseases imported from America, such as mildew or oidium. A vineyard contaminated with such a disease can see its production reduced to zero. This then explains why the use of phytosanitary products, in conventional and organic viticulture, is inevitable. To offset this situation, the Kox domain has planted PIWIs, a new family of grape varieties with strong resilience characteristics, thus requiring less treatment.
